My mom was “famous” for this Chicken A La King recipe. Many a friend and neighbor requested a copy after a luncheon featuring yummy dish. The recipe below serves 2 people.
- 1/2 Lb Cooked Diced Chicken
- 2 Cans Condensed Cream of Chicken Soup
- 1 T Diced Pimento
- 1 Can Mushrooms – 4 ozs. (drained)
- 1/2 C Diced Celery
- 1/4 C Diced Green Pepper
- 2 T Cooking Oil
Saute celery, peppers and mushrooms in oil for 3 – 4 minutes. Add undiluted soup and bring to a simmer. Add chicken and pimento. Salt and pepper to taste. Mix well and simmer for 5 minutes.
Serve on rice, on toast points or in pattie shells.
TIPS: My favorite are the pattie shells. The flaky texture adds that special something to the dish.
